Marinara sauce

Perfect sauce to make in large batches and freeze for when you need it. It makes a great pizza sauce.

 2 tbsp Olive Oil
 1 Shallot, Finely Chopped
 1 tsp Oregano
 1 tsp Basil
 2 Cloves of Garlic
 1 tsp Herbes des Provence
 400 g Can of chopped tomatoes

Heat the oil in a pan over a low heat and fry the shallot until softened but not golden, around 5 mins.

Stir in the garlic and herbs and cook for a few minutes until fragrant.

Add the tomatoes and season with salt and pepper to taste.

Optional: A small pinch of chilli flakes can be added to give a little heat.

Cook gently for 10 minuites until the onion is tender. Season further if necessary.

Using a stick blender, blend to a fine sauce.
