170 g Pasta shells
150 ml Unsweetened apple juice
1 tsp fresh mint - chopped
1 tsp White wine vinegar
225 g Cooked, shelled prawns
225 g Red apples - chopped
Salt & pepper (to taste)
Lettuce leaves
Paprika (garnish)

Boil pasta for 12 minutes

Drain and rinse in cold water

Combine apple juice, mint, vinegar, salt, and pepper

Dry prawns on kitchen roll

Peel, core, and dice the apples and add to the pasta along with the dressing

Mix well then cover with clingfilm and refrigerate for 2 hours

Wash lettuce leaves, slice finely, and use to line serving bowls

Spoon pasta mixture onto lettuce, and dust with paprika
