125 g Dark Chocolate - 70% cocoa solids
2 tbsp Cocoa powder
1 tsp Chilli powder
4 tbsp Milk
2 Eggs - separated
1 tbsp Caster sugar

Chop the chocolate into small pieces, melt gently in a bowl over a pan of water until smooth

Blend the cocoa and chilli powder with the milk until a smooth paste is formed

Add the melted chocolate and mix well

Beat the egg yolks, add to chocolate mixture

Over the pan of simmering water cook gently for about 5-7 minutes, stirring constantly

Check for taste and add more chilli if desired, remove from heat

Whisk the egg whites until stiff, add sugar, continue to whisk until glossy

Gently fold into the chocolate mixture with a metal spoon

Divide mixture into ramekins and chill until set
