Lemon & Lime Posset

 600 ml Double cream
 150 g Caster sugar
 2 Lemons (zest & Juice)
 2 Limes (zest & juice)

Add the cream and sugar to a pan and gently simmer for 3 minutes.

Add the lemon and lime juice and zest, whisk until the mixture thickens.

Pour into ramekins and chill for at least 2 hours until firm.
