Lemon, Herb & Parmesan Crusted Fish

 50 g Breadcrumbs
 1 Lemon - zest & juice
 25 g Grated Parmigiano Reggiano
 2 tbsp Chopped parsley
 Salt & black pepper - to taste
 4 Skinless and boneless fillets of firm white fish
 50 g Butter

in a bowl add the breadcrumbs, grated lemon zest, grated cheese, chopped parsley. Mix well.

Use the breadcrumb mix to coat the fish.

Season the fish with a little salt and pepper and pan fry in a little oil for 2-3 minutes until just tender

Turn over and sprinkle with the breadcrumb mixture.

brown in the pan under a hot preheated grill for 2-3 minutes.

Add butter to the pan with the lemon juice, melt around the fish, and then serve.
